Staff Profiles - The Waterside Bars & Restaurant

 

Alan Frith

Alan has worked around Chichester in the restaurant trade since 1986. Working with teams of up to 50 staff he has a wealth of knowledge to draw upon to make sure your visit is a very special experience. Striving to make the workplace a fun and efficient place to be you can expect to be served by charming and welcoming staff. Happy on either side of the bar his favourite quote is “all work and no play makes Jack a dull boy but all play and no work makes Jack a lazy boy” though we are still not sure who Jack is?!

 

Fiona Mills

Fiona is another serial restauranteur, working around the South for the last 15 years in various roles and guises. A keen photographer with her own business, she has a very keen eye for detail and brings the creative element to the Waterside. Chatty and fun she can be found talking to the customers (while selling them photography sessions…you can find her on the links page!) her favourite quote is “its better to regret something you did do rather than regret something you didn’t do”.

 

Gemma Fairbank

Gemma has worked with the company for over three years proving an invaluable asset. Just as at home as part of the management team as pouring pints behind the bar she looks after recruitment and keeping everything running to our high standards. A serial ‘bleacher’ Gemma makes sure all the staff know how to keep things clean with her beautiful cleaning lists, opening checklists, bar checks, closing checklist……… the list goes on and things stay looking beautiful! Her favourite quote; “I can resist everything except temptation”

 

Clare Frampton

Clare has worked in the service industry for many years, co-coordinating staff training for various companies and managing bars in many locations around country including Royal Ascot, Goodwood and at the Grand National. Clare has a very customer focused work ethic and loves to spend time chatting with new customers and regulars alike. Constantly smiling and keeping the team in check her favourite quote is “Drawing on my fine command of the English language, I said nothing.”

 

Steve Warne

Steve has been a bar manager for many years in some of Chichesters busiest locations. With a fine appreciation of what alcohol is and what it can do he knows the importance of clean pipes! Not only does he manage the cellar but also created The Waterside’s excellent cocktail list and likes to show off to the customers with his flaring skills…... he is just like a younger Tom Cruise! His favourite quote is; “Everyone needs to believe in something... I believe I'll have another beer."

 

Ronnie Smith

Our head chef Ronnie has not only devised a delicious menu for us all but also manages the kitchen with a very keen eye. Not many things pass his attention and he brings with him vast experience from managing various restaurant openings as well as being the head chef of some very reputable restaurants. Having now settled in Chichester from his home town of Edinburgh, Ronnie is key in the development of kitchens across the company. Ronnie’s favourite quote is;” better my way than the wrong way!”

 

Dan Storey

Dan has been in the company for a while moving to The Waterside to work alongside Ronnie from the head chef’s position at the Vestry. A local lad, Dan has a wonderful calm attitude under pressure, if the kitchen is under stress from lots of orders he is the guy you want in the middle of it all. With great sense of presentation and a good eye for detail Dan is part of the backbone of the kitchen, he likes to say “I cook with wine, sometimes I even add it to the food.”

 

Brazil

Schneider O Assis (or Brazil to his friends) brings fun and flair to the kitchen. Having gained experience in various restaurants around the South, Brazil has run kitchens and worked alongside some very good chefs. With typical Brazilian vigor he adds excitement to his dishes and keeps the staff entertained, he was once heard to say; “My computer may have beaten me at chess, but I sure beat it at kickboxing.”

 

Ryan Strudwick

Soon to be a new father, Ryan has joined the kitchen in a KP role while diligently working his way through college to advance himself in his cooking career. He has proved himself to be a great member of the team, working hard in the kitchen and learning new skills fast. He keeps the mechanics working and gets the job done. With his new arrival due Ryan said; “Fatherhood is pretending the present you love most is soap-on-a-rope”
